Bakery Innovation:
A Faster Cookie Dough Manufacturing Process
At CraftMark Bakery, we are always seeking to grow and improve for our customers, and when we asked them what new capability could strongly differentiate us from ordinary wholesale bakeries, the answer was clear: a pilot line to speed up R&D for the cookie dough manufacturing process. Pilot line capabilities would allow small batch runs and line testing of various cookie dough formulations, speeding up the innovation process and reducing the time to market.
So we built a bite-sized version of our frozen cookie dough manufacturing line, one that allows us to produce a 300 pound batch before scaling up to the usual 1750 pound batches. This allows for market testing, adjustment, and final customer approval of new products without disrupting the high speed cookie dough manufacturing process on our main line.
Our frozen cookie dough pilot line is fully integrated into our overall cookie commercialization process, and has greatly improved speed to market, while preventing any missteps.
This pilot line is just yet another example of our readiness to invest in the success of our Foodservice and ISB customers, because the more we can enable them to stay current with the latest consumer trends and preferences, the more our long term partnership can prosper.

Top Honors in Bakery Product Innovation
The IBIE B.E.S.T. in Baking Awards program recognizes wholesale bakeries and suppliers that, in support of the baking industry, have made great achievements in the baking industry. From cheesy stuffed treats to pizza crust flatbreads, the baking industry is constantly bringing new, innovative products to market. Their Product Innovation award goes to wholesale bakeries that have implemented improvements related to ingredient sourcing, product development, packaging, or distribution to drive growth of a specific product and the bakery business.
